Calvados is one of the Amber Trio of Brandy in France, also consisting of Cognac and Armagnac. The former two are made of fermented grapes, while Calvados is made of apples, giving it a unique and sweeter taste. France has always been known for their outstanding wines but their brandy is gaining more and more recognition. Calvados is produced in the Lower Normandy (Basse-Normandie) region, and so even for those looking to purchase a house for sale in Paris it is perfect for a weekend trip away. Introduced in the 17th century, it was after the French Revolution that Calvados was given its name and production of the apple brandy prevailed despite prohibition and taxation.
A deadly plant disease named phylloxera broke out in the late 18th century, killing a large amount of grapevines in France and Europe. This consequently made drinking brandy the next viable option and Calvados saw a boom in business. In 1942, Calvados was given a protected name by the AOC (Protected Appellation of Origin). The apples used to make Calvados are carefully handpicked each year starting in the middle of October through to December.
The apples must be fully matured and in perfect condition. Over 200 different varieties of apples are used in the production of Brandy and depending on the type of apple, determine the taste of the brandy. The apples are either hand or mechanically pressed and stored in oak barrels for at least two years before they can be sold as Calvados. The longer the brandy is stored the smoother the taste and typically Calvados is aged for at least five years.
